Classes are led by chef patron JP McMahon. JP has 15 years of teaching experience for both adult and presenting children's workshops that promote food provenance and better eating. A wonderful element of the classes (6-week and one day) is that when all the cooking has been done, the students sit down with JP to enjoy what's been prepared and have a chat over a glass of wine. The classes are a great way to learn how to cook and engage with current trends. Classes include demonstrations and hands-on activities for students to gain confidence in the kitchen.

This course will look at 6 basic food elements. Each week we will look at the origin and traceability of food and how best to prepare it. The course will also look at the seasonality of food, wild foods, and foraging in one’s own local environment. The course includes a tasting of the day's produce with a glass of wine at the end of the day. Students are asked to bring along a container/lunch box to bring home samples of the day's produce. Tapas are a Spanish way of cooking and eating that involves sharing and communal eating. In this course, students will be introduced to a range of different tapas, drawing on different regions of Spain for influence and diversity. They will also explore using Irish ingredients to create wonderful tapas.

This one day course will introduce students to different types of baking from bread to cakes to desserts and puddings. From brown bread and scones to sponge cakes and simple desserts such as pannacotta and frozen Ice-creams, this course offers an introduction to the world of baking with tips and techniques.

Italy cooking creates some of the most popular dishes we know: from focaccia and lasagne to risotto and pasta. This course introduces the student to a number of key Italian dishes. The student will learn to make fresh egg pasta, gnocchi, and tortellini. We will also focus on regional Italian dishes using Irish fish, meat, and vegetables.

This course introduces the student to some of the most popular Japanese techniques of cooking. From the well-known methods, such as Teriyaki, Yakitori, Ramen and Tempura to lesser-known techniques such as Karaage, Teppanyaki and Nabemono, this course gives an insight into the culinary complexity of Japan. As well as learning about these techniques the course will also show how students to use Japanese condiments, such as soy sauce, mirin, rice vinegar, umeboshi and miso, to elevate everyday dishes of fish, vegetables and meat.

Latin American cooking is a diverse and flavourful cuisine that reflects the rich cultural heritage of the region. Latin America covers a large area that includes South and Central America, Mexico and the Caribbean, and each subregion has its own culinary traditions and specialities. This course will introduce students to some of the main dishes of this vast region from tamales to salsas and empanadas and ceviche.

Greek cooking is a wonderful way to enjoy the flavours and ingredients of this ancient Mediterranean region. Greek cuisine is based on simple age old cooking methods, such as frying, baking, grilling, stewing and roasting. It uses fresh herbs, olive oil, lemon juice, garlic, cheese, yogurt and honey to enhance the taste of its traditional dishes. As a crossroads to the Middle East and Asia incorporates some of these cuisine into its national larder. Some of the Greek foods that students will cover in the class are moussaka, spanakopita, tzatziki, and baklava.

Pub food is often overlooked and rarely gets the attention it deserves. In this course, we will look at some of the classics that make up what we now call 'Gastropub' food. These include Steak, Fish and Chips, Ham hock Terrines, Potted Crab, and of course, the hand made burger. As always, emphasis will be placed on food provenance and sourcing from local suppliers. Students will also learn new cooking and culinary techniques.

This course will cover all basic cooking techniques, such as frying, roasting, braising, boiling, and smoking. It will show you how to source better meat and fish and vegetables and cook them in different ways. It will also teach you how to cure your own meat and fish, pickle your own vegetables and preserve herbs with salt and oil. In addition, students will make butter and cheese by hand. This course is suited to all with a love of food and would like to better themselves in their daily kitchen.

Over the last number of years, interest in vegetarian and vegan cookery (also referred to as plant-based cookery) has increased dramatically. Often seen as the opposite of eating meat and fish, plant-based cookery needs to be seen in a more holistic light. In this class, students will learn to prepare and cook a variety of vegetarian dishes from around the world. They will also learn about vegetable cooking in Ireland and cook a number of traditional and contemporary Irish vegetable dishes.

This day course will cover all aspects of Irish Christmas cooking, from the traditional to the innovative. Students will learn how to cook the perfect local turkey with all the trimmings. This course aims to take the stress out of Christmas cooking and make it an enjoyable experience. Students will receive a certificate on completion of the course.

The course was wonderful, great fun and rewarding. With a different theme every week there is something for everyone. The course is very practical and hands-on. The small class size together with the Informal and relaxed atmosphere ensures maximum learning under the watchful and guiding hands of culinary director, JP McMahon. I will certainly be back for more culinary adventures at Aniar boutique cookery school.
I really enjoyed this course which was hands on from the very beginning. With a small group and with a different theme each week, we got to actually prepare, cook and eat a fantastic variety of dishes. Chef JP McMahon was very engaging and shared lots of interesting things about food and how to source locally and for quality, making this much more than just a cookery course. Loved it!
